I have a guest blogger today! This is from my dear wife, Wendy. She’s a master chef who can stir up a killer Thanksgiving dinner. Enjoy!
Happy Thanksgiving Week! I bet you have dinner preparations on your mind. Chris and I consider food to be a most treasured tradition for any holiday, especially Thanksgiving, and I would like to share with your one of our favorite Thanksgiving dinner sides: sweet & sour green beans.
This recipe is in the Sides & Sauces section of my first cookbook, Love in the Kitchen Vol. 1, page 119. The cookbook is included with the discounted package of Jeub resources in the Monument Publishing’s Cyber Clearance Sale. There are nearly 200 more recipes in my cookbook, most “Jeub originals” like this one, so be sure to get your copy.
For now, here’s the recipe:
1/2 pound bacon
4 Tbsp flour
3/4 cups sugar
3/4 cups apple vinegar, scant
3 or 4 cans green beans, drained
1/4 cup green bean water from can, if desired
Fry bacon until mildly crisp. Save about 4 Tbsp of the grease. Put the bacon grease in a large saucepan over medium heat, and gradually stir in the flour, sugar, apple vinegar, and green bean water. Stir until it becomes thick like gravy. Add more bean juice if too thick. Add green beans. Lastly, crumble the bacon into it. This can be refrigerated and reheated before serving.
